A delicious muffin twist to the traditional Russian fall apple cake, Sharlotka!

If you prefer simple baked treats that are delightfully sweet, but not overly sweet, then you are going to love these simple Apple Sharlotka Muffins! This recipe is my charming little twist on the traditional Sharlotka cake that I grew up with in Russia during the autumn season. Making these delightful muffins takes me back to the autumn days of picking apples with my grandmother in our village to make the traditional fall cake. I can almost feel that crisp air on my face and still envision those apple trees, just by thinking back to those days. I loved growing up with all those baked goods and cakes around, and so now I like to keep those sweet traditions going for my own family! But I still like to add my own twist to traditional recipes, thus I decided to make the traditional cake in the form of delectable muffins!
During the fall season in Russia, most of the apples that were picked would taste a bit more tart or sour so it was common to sweeten them up by making preserves, jams, and baked apple treats, like the Apple Sharlotka. The traditional Russian cake turns out very soft, moist, and lightly sweet. When I decided to make these Apple Sharlotka Muffins I wanted them to be very similar to the traditional cake in both taste and texture. Like the cake, these muffins are made with just a few simple baking ingredients and a bunch of chopped green apples. I really like how these muffins are perfect for individual servings and come out already wrapped and ready to eat! Plus if you want to spread some autumn joy, these are perfect to give to loved ones as gifts or to serve at a holiday family gathering!
Muffin Equipment
Since these Sharlotka muffins are so simple to make, you don’t have to worry about picking up any fancy equipment. You just need some common baking tools, muffin materials, and a trusty apple peeler.
Sharlotka Muffin Tools:
- Glass mixing bowls
- Silicone spatulas
- Blending whisk
- Swivel Peeler
- Hand mixer
- Tulip muffin liners
- 12 cupcake pan
- Dough scoop
- Kitchen drying rack
- Sifter
Apple Sharlotka Muffin Ingredients
Once you’ve got your tools and utensils sorted out, it’s time to gather up some sweet and simple ingredients. As I mentioned, this recipe calls for just a handful of common baking ingredients that you probably already have on hand. Now all you need is a small bunch of apples and you’re ready to start making these little autumn delights.
Sharlotka Muffin Ingredients:
- 1 ⅓ cup all-purpose flour
- ¼ tsp baking powder
- ⅛ tsp salt
- 6 eggs
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 1 ½ Lb green apples – peeled and chopped into small cubes
- Cooking spray oil
Garnish:
- ¼ cup powdered sugar
How to Make Apple Sharlotka Muffins for Fall
Now that you’ve rounded up the tools and gathered the ingredients, it’s time to roll up those sleeves and light an autumn-scented candle because it’s time to get started on this baking journey! This Sharlotka muffin process is really easy to do and there aren’t really any tricky things to watch out for so without further ado, let’s get started!
Making the Sharlotka Muffins
- First, preheat the oven to 350°F and measure out all of the muffin ingredients.
- Next, in a medium-size mixing bowl, add the flour, baking powder, and salt.
- Combine the dry ingredients together with a blending whisk.
- Then, in a large mixing bowl, use an electric hand mixer on medium speed to beat the eggs. Afterwards, add in the sugar and vanilla extract.
- Continue to mix the wet ingredients together with the hand mixer for 6 minutes, or until completely mixed.
- Next, pour half of the dry ingredient mixture into the bowl of wet ingredients and mix well with the mixer.
- Pour the remaining half of dry ingredients into the mixture and mix again until all ingredients are completely combined.
- Then, add the small apple cubes into the batter mixture.
- Use a spatula to gently fold the apples. Make sure the apples are mixed in evenly throughout the batter.
- Next, line the muffin pan with the tulip liners and lightly spray the insides with some cooking oil spray.
- Then, use a large dough scoop to spoon the batter evenly into the muffin liners.
- Bake the muffins for 25-30 minutes, or until a toothpick stuck in the middle muffin comes out clean.
- Finally, set the muffins on a drying rack to cool completely.
Garnishing
- First, gently spoon the powdered sugar into the small sifter.
- Then, sift the powdered sugar evenly and generously over the top of the apple sharlotka muffins.
Storing Apple Sharlotka Muffins
Since these apple sharlotka muffins are made with fresh fruit, they are best stored in an airtight container and kept in the fridge for up to 5 days. For long-term storage, wrap the individual muffins tightly in a layer of cellophane wrap, then in another layer of kitchen foil. To thaw frozen muffins, transfer them to the fridge and let sit overnight. The muffins can be removed from the fridge about an hour before serving to let them come back to room temperature.
Travel Tip:
To safely travel with these marvelous muffins, try using a cupcake container or a paper cupcake box with individual cups to hold the muffins in place. This is also a great option if you want to pack up these tasty treats to give as gifts!
