When summer hits, I crave cold, juicy fruit—and watermelon is always at the top of my list. But when I want to make it a little more fun for the kids (and let’s be honest, for myself too), I dip it in chocolate and garnish it with all kinds of toppings. These Watermelon Bites Dipped in Chocolate are sweet, cold, crunchy, and totally irresistible.
I came up with this recipe during one of our backyard summer picnics. I had extra watermelon and a little chocolate left from my Chocolate Dipped Strawberries, and thought—why not dip watermelon? The result was better than I expected. My daughter even helped with the garnishes and called them “fancy fruit pops.”

How I Make It
- Prepare a baking sheet lined with parchment paper and set out your garnishes so they’re ready to go.
- Slice the watermelon into 1-inch thick strips, then cut into 1-inch cubes. Stick each cube with a wooden appetizer fork.
- In your candy melts pot, combine the chocolate chips and coconut oil. Stir with a silicone spatula until completely melted and smooth.
- Dip each watermelon cube halfway into the melted chocolate.
- Immediately sprinkle with your choice of garnish while the chocolate is still soft.
- Place the decorated bites on the prepared baking sheet.
- Chill in the refrigerator for 10 minutes, or until the chocolate is set.
- Serve immediately and enjoy cold!

- 2 bags Chocolate Chips
- 1 tbsp Coconut Oil

- Line a baking sheet with parchment paper and set out all your garnishing ingredients so they’re ready to go.
- Slice the watermelon into 1-inch thick strips, then cut each strip into 1-inch cubes. Insert a wooden appetizer fork into each cube for easy dipping.
- Add the chocolate chips and coconut oil to a candy melt pot. Melt while stirring with a silicone spatula until the mixture is smooth and fully melted.
- Carefully dip each watermelon cube halfway into the melted chocolate, allowing excess chocolate to drip off.
- Quickly sprinkle your favorite garnishes on the dipped chocolate while it’s still wet so they stick well. Arrange the finished bites back onto the parchment-lined baking sheet in a single layer.
