Line a baking sheet with parchment paper and set out all your garnishing ingredients so they’re ready to go.
Slice the watermelon into 1-inch thick strips, then cut each strip into 1-inch cubes. Insert a wooden appetizer fork into each cube for easy dipping.
Add the chocolate chips and coconut oil to a candy melt pot. Melt while stirring with a silicone spatula until the mixture is smooth and fully melted.
Carefully dip each watermelon cube halfway into the melted chocolate, allowing excess chocolate to drip off.
Quickly sprinkle your favorite garnishes on the dipped chocolate while it’s still wet so they stick well. Arrange the finished bites back onto the parchment-lined baking sheet in a single layer.
Chill the tray in the refrigerator for 10 minutes, or until the chocolate hardens and sets completely.Serve your chocolate covered watermelon bites immediately while cold—and enjoy every juicy, chocolatey bite!
