My love for these cookies started when I first tried Pepperidge Farm’s Chocolate Macadamia Crispy Cookies. They were incredibly addictive, but I knew I could create an even better version. After countless trials and errors, I finally created the perfect recipe for chewy and crunchy white chocolate macadamia nut cookies.

    I have to admit, I usually freeze half of the batch of baked cookies for later, but this particular recipe is an exception. It’s so delicious that my husband and I can’t help but go back in the kitchen for just one more cookie. I can’t blame him, these cookies are irresistible!

    INGREDIENTS  

    • 2 ¾ Cups All-Purpose Flour
    • 1 tsp Baking Soda
    • 1 tsp Baking Powder
    • 2 tsp Cornstarch
    • ½ tsp salt
    • 1 Cup Unsalted Butter melted and cooled
    • 1 Cup Brown Sugar
    • ½ Cup Granulated Sugar
    • 2 Large Eggs
    • 2 tsp Vanilla Extract
    • 2 ½ Cups White Chocolate Chips
    • 1 ½ Cups Macadamia nuts roughly chopped

    Making White Chocolate Macadamia Nut Cookies: 

    • Measure all ingredients and preheat oven to 410F.
    • In a medium bowl, combine all-purpose flour, baking soda, baking powder, cornstarch, and salt.
    • Mix it with a hand whisk.
    • In a large bowl, combine unsalted butter, brown sugar, and granulated sugar.
    • Mix it with a whisk.
    • Add eggs and vanilla extract.
    • Whisk it together until fully combined.
    • Add the dry ingredients to the large bowl and mix it.
    • Whisk ingredients until the dough becomes hard to whisk.
    • Switch to a silicone spatula and finish mixing the cookie dough.
    • Add white chocolate chips and macadamia nuts (roughly chopped) to the dough.
    • Mix until all chocolate chips and macadamia are evenly mixed into the cookie dough.
    • Prepare a baking sheet lined with parchment paper.
    • Use a small cookie scoop to scoop the dough onto the baking sheet. Refrigerate the baking tray with the dough scoops for 10 minutes.
    • Bake the cookies at 410F for 7-8 minutes.
    • Remove the baking sheet with cookies out of the oven.
    • Transfer the cookies to a cooling rack.
    • Let the cookies cool completely before enjoying.

    How to store baked cookies

    Storing cookies properly can ensure that they remain fresh and delicious. Here are a few tips on how to store your baked cookies:

    Countertop: Store your cookies in an airtight container on the countertop. They will stay fresh for up to a week at room temperature.

    Refrigerator: If you want to keep your cookies fresh for longer, you can store them in an airtight container in the refrigerator. They will stay fresh for up to two weeks in the refrigerator. Just make sure to bring them to room temperature before serving for the best taste and texture.

    Freezer: To keep your cookies fresh for an extended period of time, you can store them in the freezer. As I always do, I freeze half of the batch. To freeze them, place them in an airtight container or seal them in a gallon Ziploc bag. Before placing them in the freezer, write the date on the bag with a black sharpie. This way, you can easily track how long they have been stored. Cookies will stay fresh for up to three months in the freezer. Just make sure to thaw them at room temperature before serving them for the best taste and texture.

    It’s important to note that cookies with high-fat content, like white chocolate macadamia nut cookies, tend to freeze better than others.
