Darker/ bottom layer of the Fudge
- water fill cooking pot half way
- 1 ½ cups Semi-Sweet Chocolate Chips
- 8 oz sweetened condensed milk half of can
- 2 tbsp unsalted butter room temperature
- ½ tsp vanilla extract
- 2 tbsp Peppermint Candy Canes crushed, small pieces
White layer, top layer of the fudge
- 1 ½ cups White Chocolate Chips
- 8 oz sweetened condensed milk half of can
- 2 tbsp unsalted butter room temperature
- ½ tsp vanilla extract
Topping
- 1 tbsp Peppermint Candy Canes crushed, medium pieces

- Take the cheesecake pan with the first layer of fudge from the fridge.
- Transfer the white chocolate layer fudge mixture into the pan.
- Use a clean spatula to spread the mixture evenly.
- Sprinkle more crushed candy canes on top of the fudge.
- Gently press the candy canes into the fudge. Refrigerate for a minimum of 2 hours or preferably overnight.
Cutting the Fudge
- Once the fudge has hardened, prepare a cutting board, disposable gloves, and a large knife. Have a wet kitchen towel on hand to wipe the knife after each cut.
- Remove the fudge from the pan.
- Peel it off the parchment paper.
- Place the fudge on the cutting board.
- Score the fudge using a 5-wheel pastry cutter.
- Turn the fudge block 90 degrees.
- Score again to create even squares.
- Cut the edges of the fudge with a large knife, wiping the knife with a wet kitchen towel after each cut.

- Turn the fudge block 90 degrees and finish cutting the fudge using the scored guidelines.
