    As far as side dishes go, there’s something about Mexican rice that is just so tasty and satisfying that it goes great with just about everything, especially the way I make it! My homemade Mexican Rice is packed with yummy flavors but not any spicy seasonings making it a perfect side dish anytime.

    Even though my house is full of diverse and somewhat picky eaters, this is a recipe I can never go wrong with! It’s quick, easy, and packs just the right amount of flavor for everyone in my house. I like to serve this rice dish along with grilled chicken, shrimp, or even salmon for a satisfying wholesome meal.

    If you need a flavorful side dish that’s picky-eater approved then this is the perfect recipe for you to try! And the best part of all? The entire dish is made in just one pot, making clean-up even easier! Ready to get those bellies fed? Here’s how to make my easy Mexican rice.

    First, let me go over my short and simple equipment list for this rice dish. Nothing special or fancy needed here, just a few basic common kitchen tools. Here’s what I use to make easy Mexican rice:

    • Measuring Cup
    • Rice Washer
    • Measuring spoons
    • Spatulas
    • Cooking pot, 6 Quart

    Mexican Rice Ingredients

    Now let me break down the ingredients I use for this rice recipe. My version of this rice dish is very simple so I don’t have to get a ton of ingredients either. In fact, this is a fantastic recipe to be able to throw together with mostly pantry items that you probably already have! Here are my ingredients for simple Mexican rice:

    • 2 tbsp vegetable oil
    • 2 cup long grain rice
    • 1 clove of garlic– minced
    • 4 cup chicken broth
    • 1/2 tsp salt
    • 1/2 cup ground pepper
    • 6 oz tomato paste
    • 4 tbsp fresh cilantro– minced

    How to Make Easy Mexican Rice

    Now it’s time to go over how to make this simple and satisfying dish! This process is super easy and simple so it’s perfect for beginners or even for kids to help with when they’re first learning to cook! Here’s how to make my easy Mexican rice:

    1. First, measure out all of the rice ingredients with the measuring cup and spoons.
    2. Then, use the rice washer to rinse and strain the rice.
    3. Next, preheat a large cooking pot.
    4. Pour in the vegetable oil and let it heat up.
    5. Then, pour in the rinsed rice.
    6. Cook the rice on medium-high, while stirring regularly.
    7. Cook until the rice is golden brown.
    8. Next, add the garlic and cook for another 3 minutes while stirring.
    9. Cook for another 2 minutes and stir again.
    10. Next, pour in the chicken stock. 
    11. Then, add in the salt, pepper, and tomato paste. Stir and bring to a boil. 
    12. Combine all the ingredients together with a blending whisk.
    13. Next, cover and simmer for 30-40 minutes, or until no liquid is left.
    14. Check to make sure the rice is fully cooked.
    15. Then, add in the chopped cilantro.
    16. Mix the cilantro evenly and gently with a spatula.
    17. Finally, serve this easy Mexican rice and enjoy!

    Storing Mexican Rice

    To store Mexican rice: first, let the Mexican rice cool to room temp. Then transfer to an airtight container and label the date on the outside to keep up with freshness. Store in the refrigerator for 4 to 5 days.
