    Having a young daughter who is a princess-to-be means that everything is always rainbows, sprinkles, sparkles, and fairy tale inspired. She is a true girly-girl to her core! So I wanted to make a special cake inspired by her youthful and girly style. I combined that idea with one of my top favorite desserts to bake, the bundt cake, and twisted them together to come up with the ultimate pink dream of a cake! I made her a sugary, sweet Funfetti Bundt Cake filled and topped with pink buttercream frosting and decorated with colorful rainbow sprinkles! For this particular cake project, I am so glad I chose pink coloring for my frosting because the color really helps give it that extra girly flair for a really girly young lady.

    I did run into a few learning curves when I first attempted this funfetti bundt cake though. I ended up having to make this cake 3 times because the cake and sprinkles inside kept sticking to the pan. Now I learned some time ago that the simple solution to removing cooked bundt cakes from their pan without sticking was just to coat the inside of the pan with shortening and flour and then to shake out the excess flour before pouring in the cake batter. However, it wasn’t quite that simple with this particular cake because of the sugary sprinkles. I finally figured out that the solution for the funfetti cake was to use more shortening in the pan and not to shake out the excess flour. You need that extra flour to keep the sprinkles from melting and sticking to the pan. As long as you keep that part in mind this will still be a fun and easy cake to make!

    Equipment for Bundt Cake Success:

    The first step of any successful baking project is to prepare yourself with the right tools for the job. For this funfetti bundt cake, you will need some usual baking equipment but with a couple of extra tools that you may not have thought to use before. Those special tools are what is needed to be able to easily fill and decorate the cake with buttercream frosting.

    Bundt Cake Tools:

    • Cooling rack
    • Electric hand mixer
    • Glass mixing bowls
    • Bundt cake pan
    • Blending whisk
    • Apple Corer
    • Piping bags
    • Piping bag ties

    Bright and Colorful Funfetti Bundt Cake Ingredients

    After you have your bundt cake tools and equipment gathered up and ready, it is time to move on to rounding up the ingredients for this sugary sweet cake. To make this particular baking adventure a bit easier on myself I decided to use a store-bought buttercream frosting and just spruce it up at home for a better quality. For the absolute best-tasting cakes I usually like to go completely homemade and make my own Buttercream Frosting from scratch but sometimes there just is not enough time for all of that.

    For Funfetti Bundt Cake:

    • 3 Cups Cake flour or all-purpose flour – I much prefer using cake flour in my cake recipes because it makes such a wonderful difference in the final cake moisture and texture.
    • ½ tsp Salt
    • ½ tsp Baking powder
    • 6 Eggs
    • 1 tsp Vanilla extract
    • 1 Cup Butter room temperature
    • 2 Cups Sugar
    • 1 Cup Sour cream
    • ½ Cup Confetti rainbow sprinkles

    Bundt Cake Pan coating:

    • 3 tbsp Vegetable shortening
    • 2 tbsp All-purpose flour

    Frosting and Garnishes:

    • 1 Can Buttercream frosting
    • ¼ Cup Confetti rainbow sprinkles
    • Food Coloring: pink

    Baking Up a Perfect Funfetti Bundt Cake

    Now we can move on to the super-satisfying part of this baking journey: making and baking the magic! Overall this fancy cake is really easy and fun to make. And with the extra yummy filling the final result is just absolutely fabulous. Just make sure to read over all of the steps before beginning your cake-baking project at home to have a general idea of the different steps you will need to take for this particular cake. Also, keep in mind that there’s a bit more to the coating process for this specific recipe.

    Mixing Up the Funfetti Cake Batter:

    • First, preheat the oven to 350°F.
    • In a medium-sized glass mixing bowl, mix together the cake flour, baking powder, and salt.
    • Then, in a separate large mixing bowl, use the hand mixer to beat the butter and sugar together until light and pale in color.
    • Next, use the blending whisk to whisk the eggs together in another separate bowl. Then, drop in the vanilla extract and whisk again.
    • Then, add in the sour cream and mix well.
    • Add the egg mixture, ½ at a time, into the large bowl with the butter/sugar mixture.
    • Then, add in the dry ingredients ⅓ at a time into the large bowl with the wet ingredients, mixing well between each addition.

    Lastly, fold the rainbow sprinkles gently into the cake batter using a spatula. Then, move on to prepping the bundt cake pan.

    Coating the Bundt Cake Pan:

    • Start by greasing the bundt cake pan with the vegetable shortening.
    • Then, sprinkle the all-purpose flour over the entire inside of the bundt cake pan and roll the flour around to make sure the entire pan is thoroughly coated. Don’t shake out the excess flour!
    • Next, pour the funfetti cake batter evenly into the bundt pan.
    • Bake the funfetti bundt cake for 50-65 minutes, or until a toothpick inserted in the center of the cake comes out clean.
    • Then, cool the cake for a full 10 minutes before removing it from the cake pan.
    • Carefully transfer the cake from the pan onto the cooling wire rack. Cover the cake with a kitchen towel and let it cool again for 30-40 minutes.
      • To make this baking project a little quicker on yourself, while the cake is cooling you can start getting the buttercream frosting ready.
    • After the cake has cooled completely, flip the cake upside down onto the cutting board. Then, use an apple corer to punch 6 holes into the cake. Do not discard the pieces of cake that were punched out, you will need them for later.

    Filling and Garnishing the Funfetti Cake:

    • To prep the store-bought buttercream frosting, start by transferring it all into a large mixing bowl and mix on medium speed with the hand mixer for 2-3 minutes.
    • Then, use a toothpick to add a small amount of pink food coloring to the frosting and mix until the color is combined evenly.
    • Next, transfer ⅓  of the pink buttercream frosting into a pastry piping bag and close it off with a piping bag tie.
    • Now, grab a pair of scissors and cut ½ inch from the tip of the piping bag. Pipe the buttercream frosting into the holes you punched out from the cake and then close them back with the cake cut-outs.
    • Then, carefully flip the bundt cake onto a cake stand or a cake-sized serving plate.
    • Spoon the rest of the buttercream frosting on top of the funfetti bundt cake and spread it until the cake is frosted completely.
    • Finally, sprinkle the remaining confetti rainbow sprinkles generously over the top of the finished funfetti bundt cake.

    Bundt Cake Storage and Safe Transport

    Need to transfer this pink beauty of a cake from the kitchen to a different party location? No worries, it can be so simple! You can pack up this cake nice and neat in one of these cake boxes for worry-free travel! These boxes keep the cakes safe, secure, and in place during travel plus they have a window on top for ultimate, eye-pleasing presentation for when you get there. This is also a great option if you’re making this cake as a gift to drop off to a loved one.

    If there is any cake leftover you can easily store and save it for future enjoyment! If properly stored, your funfetti bundt cake can last for quite some time. Here are a few proper bundt cake storage options:

    • Store cake in a cake container and keep up to 3 days on the counter at room temp.
    • Store bundt cake in the fridge, either wrapped or in an air-tight container for up to 1 week.
    • Individual slices can be frozen for longer-term storage. First, wrap the individual slice in cellophane then wrap again in kitchen foil. These slices will stay good in the freezer for up to 3 months.
      • Always use a marker to label the date on the outside of the wrapping to keep up with freshness.

    • Preheat the oven to 350°F.

    • Grease bundt cake with vegetable shortening.

    • Sprinkle pan over with flour—roll flour inside the bundt cake. Don't shake off access flour.
    • Pour cake batter into bundt pan evenly.

    • Bake for 50-65 minutes, or a toothpick inserted in the center comes out clean.
    • Cool for 10 minutes before removing from the pan.

    • Remove cake from the pan into the wire rack. Cover with a kitchen towel and let cool for 30-40 minutes.

    • Flip cake upside down into the cutting board. Cut 6 holes with an apple corer.

    Garnish

    • Put store-bought buttercream frosting into a large mixing bowl and mix on medium speed with a hand mixer, 2-3 minutes.

    • With a toothpick, add pink food coloring. Mix until color is combined.

    • Transfer 1/3 of buttercream frosting into a piping bag and close with a piping bag tie.

    • Cut with scissors 1/2 inch from the tip of the piping bag. Pipe buttercream frosting into the holes and close them with cake.
