How to make easy, pleasing, bacon and cheese egg muffins to feed a small crowd!

    One thing most families have in common with each other is a busy lifestyle. Between work, school, practices, meetings, errands, and whatever else comes up, it’s almost impossible to escape the daily chaos that comes with a family of busy schedules. And sometimes in the midst of all that chaos, it can be easy to lose track of things like, for example, making sure everyone starts their day with a satisfying breakfast. Even amidst busy schedules breakfast is very important for helping set the tone for the rest of the day and starting off with a positive mindset. So to keep up with the chaos, easy breakfast recipes like these Bacon and Cheese Egg Muffins are an absolute essential!

    These yummy egg muffins are not only easy and quick to make, but they are also so satisfyingly delicious that even the pickiest of eaters can’t resist this kind of tasty start to the day! Plus these egg muffins are absolutely perfect for a make-ahead breakfast if you already know that you have a busy week coming up and will need breakfast ready in a flash in the upcoming days. On the other hand, these egg-cellent muffins are also absolutely fantastic for easily feeding small crowds for get-togethers or brunches. Basically, these easy, cheesy egg muffins are going to be the breakfast go-to for just about everything!

    Easy Egg-y Equipment

    This easy breakfast recipe starts with gathering up just a few common kitchen tools for a delightfully simple start. The only utensils you need to make these easy egg muffins are:

    • 6-Cup silicone cupcake pan
    • glass mixing bowls
    • Blending whisk

    Equipment Tip:

    I much prefer my silicone muffin pan to a metal pan for this recipe because I don’t have to worry about the egg muffins getting stuck to the pan during the cooking process and becoming difficult to remove from the pan later on.

    Easy and Cheesy Ingredients

    Now, when it comes to the ingredient list everything is pretty simple, but also, customizable. I’ve listed my favorite ingredients to use in these tasty bacon and cheese egg muffins but you can swap some of them out for your own favorite toppings. This can be especially handy if you have picky eaters in your house and need to make a variety of muffins so that everyone can enjoy their breakfast fuss-free!

    Bacon and Cheese Egg Muffin Ingredients:

    • 5 eggs
    • ⅛ tsp salt
    • ⅛ tsp pepper
    • ¼ cup heavy cream or milk
    • ½ cup green onions – sliced
    • ½ cup precooked bacon – chopped into small bits
      • Here’s my easy recipe for Oven-Baked Bacon
    • ½ cup cherry tomatoes – sliced
    • ½ cup Mexican blend cheese
    • Cooking oil spray

    Other Ingredient Ideas:

    • Mix in some chopped spinach for a healthy twist.
    • The bacon could be swapped out with other meats such as turkey bacon or cubed ham if desired.
    • Add any of your other favorite omelet toppings such as sauteed mushrooms, roasted peppers or onions, olives, or whatever you like!
    • You can swap the cheese for any other shredded cheeses you prefer such as cheddar or mozzarella. For the best results just make sure to use a cheese that is thinly shredded.

    How to Make Crowd-Pleasing Bacon and Cheese Egg Muffins

    Once you realize just how easy and quick this simple breakfast recipe is, you’ll wonder how you ever went without it before! These cheesy bacon egg muffins make it easy to feed a hungry house quickly so everyone can start their day with satisfied bellies and smiles on their faces! Here’s how to do it:

    1. First, preheat the oven to 350°F and grease the silicone muffin pan with cooking oil spray. Prepare and measure out all of the egg muffin ingredients.
    2. Then, in a large mixing bowl, whisk together the eggs, heavy cream, salt, and pepper using a blending whisk.
    3. Next, place the chopped bacon, tomatoes, green onion, and cheese in the bottom of each muffin cup.
    4. Then, evenly scoop the egg mixture into the muffin pan on top of the other ingredients. 
    5. Finally, bake the bacon and cheese egg muffins for 20-25 minutes. Carefully remove the muffins from the silicone pan, serve and enjoy!

    Storing Easy Egg Muffins

    To store egg muffins, first transfer them to an airtight container, or Ziploc bag, and keep them in the refrigerator for up to 3 days. Or to freeze the egg muffins, individually wrap each muffin with plastic wrap. Then, transfer the wrapped egg muffins to a freezer-safe Ziploc bag, or airtight container, and keep them in the freezer for up to 3 months. Always label the date on the outside of the container. To reheat egg muffins from the fridge, place them on a microwave-safe plate and heat for about 20-30 seconds. To reheat the egg muffins from frozen, heat in the microwave for 60-90 seconds or until heated all the way through.
