With a busy family like mine, between bouncing from work to school, to practices and everything else, we need to stay fueled up and energized throughout the entire day! While a lot of active families will simply stock up on energy bars and store-bought snacks, I always prefer to stick with my own customizable homemade treats.
One of my (and my daughter’s) favorite energetic snacks to keep us going are these Soft Oatmeal Raisin Walnut Cookies! These yummy one-bite cookies are packed full of proteins and fiber, just like homemade energy bars. Not only are these healthy cookies easy and fast to make, but they also store very well in the fridge or even the freezer for long-term storage.
I especially like to make these for my daughter to snack on while she has 5-10 minutes between her competitive ice skate practices. Usually, that’s just enough time to put her skates on, but I want to make sure she has plenty of energy to feel her best throughout the rest of her practice. Since these are on-the-go energizing cookies, they’re perfect for kid athletes to snack on during short breaks at intense practices!

First, let me go over my equipment list for these easy and energizing cookies. I don’t need a whole lot to make these tasty treats, just a few common baking tools and equipment. Here’s what I use to make these protein-packed oatmeal cookies:
- Measuring Cup
- Measuring spoons
- Spatulas
- KitchenAid mixer
- Dough scoop – 2 tbsp scoop
- Baking sheet
- Parchment paper sheets
- Fine mesh strainer
Oatmeal Raisin Cookie Ingredients
Now let me break down the ingredient list for these energy bar cookies. There’s nothing too fancy to expect here, just a bunch of sweet, mouth-watering ingredients! Here are my favorite ingredients for these energy bar cookies:
- 1 Cup All-Purpose Flour
- ½ tsp Ground Cinnamon
- ½ tsp Baking Soda
- ¼ tsp Salt
- ½ Cup Unsalted Butter, room temperature
- 3/4 cup Maple syrup
- 1 Large Egg
- 1 tsp Vanilla Extract
- 1 ½ cups Old-Fashioned Rolled Oats
- 1 cup Raisins, soaked and drained
- 1 cup Walnuts, chopped
How to Make Soft Oatmeal Raisin Walnut Cookies
Now let’s get to the main event here: whipping up a batch of healthy cookies! These delightful treats don’t take very long to make so let’s get right to it! There is a prep step involved with the raisins, so what I like to do is get those boiling first and then go ahead and start on making my cookie dough to save on time. Here’s how I make Soft Oatmeal Raisin Walnut Cookies:
Prep Step:
To keep the raisins from drying out while making the cookie dough: first, soak the raisins in boiling water for 15 minutes, then drain them completely through a fine-mesh strainer. This quick step will make the raisins plump and extra flavorful!
- First, prepare and measure out all of the oatmeal raisin cookie ingredients with the measuring cup and spoons.
- Next, pour the flour, cinnamon, baking soda, and salt into a large mixing bowl.
- Combine the dry ingredients completely with a blending whisk.
- Then, prepare a KitchenAid mixer with a blending attachment and a stand mixer bowl.
- Add the softened butter to the mixer bowl.
- Beat the butter by itself until peaks form.
- Then, pour in the maple syrup.
- Mix the ingredients together until well combined.
- Next, add in the eggs and vanilla extract.
- Mix again until the ingredients are incorporated with each other.
- Add the flour mixture into the mixer bowl of wet ingredients.
- Beat and blend the ingredients until the cookie dough is smooth and the ingredients are completely mixed together.
- Next, switch to the hook attachment and add in the raisins, walnuts, and oats.
- Mix the cookie dough one more time to make sure everything is completely combined.
- Then, line a baking sheet or two with a sheet of parchment paper and grab a dough scoop. Use the scoop to spoon even cookie dough balls, spread out, over the lined cookie sheets.
- Chill the cookie dough balls in the fridge for 30 minutes and preheat the oven to 350°F.
- Bake the oatmeal raisin cookies for 10-12 minutes.
- Then, let the cookies cool on the pan for another 10 minutes.
- Finally, serve and enjoy!
How to Store Oatmeal Raisin Walnut Cookies and Cookie Dough
To store oatmeal raisin cookies: transfer the cooled cookies to an airtight container and store them in the fridge for up to 5 days. To freeze the cookies, wrap them in saran wrap and then in aluminum foil. Store the cookies in the freezer for up to 3 months. Always label the date on the outside of the wrap to keep up with freshness.
Freezing Oatmeal Cookie Dough:
If you want to freeze the oatmeal cookie dough before baking, put each scoop of dough onto a cookie tray and freeze them. Once frozen, transfer the cookie dough balls to an airtight bag, label them, and put them back into the freezer. These oatmeal cookie dough scoops can stay frozen for up to 3 months. Defrost the frozen dough at room temperature before baking.
