As a busy mom and a photography business owner, I live for healthy recipes that I can make in 30 minutes or less! Now, don’t get me wrong. I love to get crafty in the kitchen and make intricate recipes with great detail too, but more times than not I simply just don’t have time for those time-consuming recipes.

Between work, school, sports practices, appointments, and whatever else comes up, we parents stay busy and need all the help we can get, especially in the kitchen. On my busiest nights I love to pull out those recipes for 30 minute meals, or even better 15 minute meals! One of my favorites is this one for my easy Garlic Shrimp Pasta with Spinach!

This simple pasta is quick, easy, and doesn’t require many ingredients or tools, which makes it a perfect meal for a very busy family! Especially if your family is like mine and you need yummy meals that can satisfy both a picky eater, like my daughter, and a vegetarian, like my husband. This is one of those magnificent no-fuss meals that luckily doesn’t require very much time or effort!

And the best part is that this recipe is packed with healthy ingredients but can still satisfy hungry bellies! A healthy meal that’s satisfying, absolutely scrumptious, easy to make, and can be ready in under 30 minutes? What more could you ask for?! Here’s how to make my scrumptious Garlic Shrimp Pasta with Spinach.

To make garlic shrimp pasta, all you need is: pasta, shrimp, olive oil, garlic, pepper, Italian seasoning, butter, vegetable broth, spinach, shaved parmesan cheese, a skillet, and some cooking utensils. First, cook the pasta according to the package instructions. Then, combine the shrimp, olive oil, garlic, pepper, and Italian seasoning and let sit while pasta cooks. Then, heat up the butter and vegetable stock in a skillet over medium-high heat. Add the shrimp in a single layer and cook for 1 minute. Flip and cook 1 more minute, then remove from heat. Then, heat up more olive oil in the skillet, add the spinach, and cook for about 30 seconds or until wilted. Finally, divide the cooked pasta into serving bowls. Top with the spinach, garlic shrimp, and shaved parmesan. Serve and enjoy!

How to Make Garlic Shrimp Pasta with Spinach

Now, let me break down this super easy process for cooking this simple shrimp and spinach pasta in no time! Since there isn’t a whole lot to this process, it usually only takes me about 15-20 minutes to cook and prepare this easy and beautiful pasta dish. Talk about a time and a life saver! Here’s how I make garlic shrimp pasta with spinach:

    1. First, measure out all of the pasta ingredients with the measuring cup and spoons.
    2. Next, cook the pasta per the package instructions.
    3. While the pasta is cooking, combine the shrimp, 2 tbsp olive oil, garlic, pepper, and Italian seasoning in a medium bowl.
      1. Let this mixture sit while pasta is cooking, or you can do this the night before and let it marinate overnight in the fridge.
    4. Next, begin preheating a large nonstick skillet over medium-high heat.
    5. Add the butter and vegetable stock to the skillet and let the butter melt completely.
    6. Then, place the marinated shrimp in the skillet in a single layer and cook for 1 minute.
    7. Flip and cook the shrimp for an additional 1 minute, then remove them from the heat.
    8. Using the same skillet, heat up 2 tbsp olive oil and add the spinach.
    9. Cook until the spinach is wilted, about 30 seconds.
    10. Next, divide the cooked pasta into serving bowls.
    11. Top the pasta with the cooked spinach.
    12. Then, pile on the garlic shrimp!
      1. For vegetarians you can simply skip this shrimpy step.
    13. Garnish the shrimp pasta bowls generously with shaved parmesan.
    14. Finally, serve and devour!

    Pasta Serving and Storage Tip:

This shrimp pasta dish is best served while hot and fresh! Due to the spinach and shrimp, it does not keep very well in the fridge as leftovers so I recommend serving all of the pasta right after cooking.
