When summer hits, I crave cold, juicy fruit—and watermelon is always at the top of my list. But when I want to make it a little more fun for the kids (and let’s be honest, for myself too), I dip it in chocolate and garnish it with all kinds of toppings. These Watermelon Bites Dipped in Chocolate are sweet, cold, crunchy, and totally irresistible.

I came up with this recipe during one of our backyard summer picnics. I had extra watermelon and a little chocolate left from my Chocolate Dipped Strawberries, and thought—why not dip watermelon? The result was better than I expected. My daughter even helped with the garnishes and called them “fancy fruit pops.”

    • Wooden Appetizer Forks – Makes each bite easy to dip and eat without getting your hands sticky.
    • Parchment-Lined Baking Sheet – Helps the dipped bites cool without sticking.
    • Silicone Spatula – Ideal for stirring chocolate smoothly as it melts.

    How I Make It

    1. Prepare a baking sheet lined with parchment paper and set out your garnishes so they’re ready to go.
    2. Slice the watermelon into 1-inch thick strips, then cut into 1-inch cubes. Stick each cube with a wooden appetizer fork.
    3. In your candy melts pot, combine the chocolate chips and coconut oil. Stir with a silicone spatula until completely melted and smooth.
    4. Dip each watermelon cube halfway into the melted chocolate.
    5. Immediately sprinkle with your choice of garnish while the chocolate is still soft.
    6. Place the decorated bites on the prepared baking sheet.
    7. Chill in the refrigerator for 10 minutes, or until the chocolate is set.
    8. Serve immediately and enjoy cold!

    Storage Tips

    • Best enjoyed fresh, right after chilling.
    • If needed, store in a single layer in the fridge for up to 1 day.
    • Avoid freezing—watermelon doesn’t thaw well.
