One of my absolute favorite things about autumn is the long-awaited soup season! Soups are like magical little meals that pack in a lot of flavors, a lot of comforts, and can be made with a lot of ease. One of my favorite go-to recipes to break in the soup season is this one for satisfying Tomato Soup made from fresh tomatoes!
Starting this recipe with fresh tomatoes might sound a little more challenging at first, but let me assure you that this recipe is super easy to do right on the stovetop! Not to mention, the fresh tomato taste in my recipe is absolutely unbeatable and incomparable. This easy autumn dish can be made in just 30 minutes.
Not only is this the perfect meal to warm up with tonight, but this recipe is great for easy meal prep too. If you like to keep a few easy prepped meals in your freezer for those busy weeknights, this is a perfect one to have prepared for later on. Easy Soup Equipment
My easy tomato soup recipe doesn’t require a lot of tools to be made successfully. In fact, all you need is 2 pieces of common kitchen equipment and you’re good to go! Here’s what I use to make simple and satisfying tomato soup:
Homemade Tomato Soup Ingredients
Now let me go over my ingredient list for this scrumptious soup. Overall, I don’t actually use a whole lot of ingredients either. A few seasonings, a few fresh veggies, and a few of the right flavorings are all it takes to make this simple recipe. As for the garnishes, there are endless pairing possibilities!
Tomato Soup Ingredients:
- 3 Lb Heirloom Tomatoes – sliced or chopped
- ¼ cup Olive Oil
- 1 tsp salt
- 1 ½ tsp pepper
- 2 cups yellow onion – chopped
- 6 cloves of garlic – finely minced
- 2 tbsp unsalted butter
- 4 cups Fresh Basil
- 2 cups chicken stock
- 2 tbsp all-purpose flour
Good garnishes:
- Fresh Basil – chopped
- Grated Parmesan Cheese
- Coconut Cream
- Sourdough bread
- Grilled cheese sandwich
- Croutons
How to Make the Best Homemade Tomato Soup
Drum roll, please! It’s time to get to the main attraction of this soup show: making the best and easiest homemade tomato soup ever! In just a few minutes and a few simple steps, you will be well on your way to scrumptious soup satisfaction. Here’s how I make homemade tomato soup with fresh tomatoes:
- First, prepare and measure out all of the soup ingredients.
- Next, heat the butter in a dutch oven, or large pot, over medium-high heat. Add the chopped onions and saute for about 3-4 minutes, or until softened.
- Then, add in the minced garlic and continue sauteing for another 3-4 minutes or until the onions are golden and the garlic is fragrant.
- Add the tomatoes, chicken stock, olive oil, flour, salt, and pepper. Stir the soup mixture, increase the heat, and bring the soup to a simmer.
- Once simmering, cover and let the soup gently simmer for 10-15 minutes, or until the tomatoes have broken down. Stir occasionally. Then, remove the pot from the heat.
- Next, transfer the soup to a blender. Add in the fresh basil leaves and blend the soup until it reaches the desired consistency.
- If needed, the soup can be returned to the dutch oven to keep warm until serving time.
- Finally, pour the tomato soup evenly into serving bowls and serve with your favorite garnishes and sides!
How to Store Soup
To store homemade tomato soup: first, transfer the soup to an airtight container and label the date on the outside. Store the soup in the fridge for up to 4 days. To store soup in the freezer, transfer it to a large, freezer-safe Ziploc bag. Label the date on the outside of the bag and then freeze it flat for easy storage. This tomato soup can be kept frozen for up to 3 months.
