    Fudge has been around for over a century, and its popularity has only grown over time. While the origins of fudge are somewhat disputed, one thing is clear – it’s a beloved treat that has stood the test of time.

    Pistachio fudge, in particular, has become increasingly popular in recent years. It’s a modern twist on the classic recipe that incorporates the unique flavor and texture of pistachios. In fact, some say that pistachios are the new almonds in the world of desserts!

    The Ultimate Pistachio Fudge Recipe

    EQUIPMENT

    • Measuring Cup
    • Measuring spoons
    • 1 Saucepan
    • 1 Glass mixing bowl large
    • Spatulas
    • 8X8 Glass baking pan
    • 1 Parchment paper sheets
    • Disposable Vinyl Gloves
    • 5 Wheel Dough Cutter
    • Knife large

    INGREDIENTS  

    • 3 cups White Chocolate Chips
    • 14 oz sweetened condensed milk 1 can
    • ¼ cup unsalted butter room temperature
    • 1 tsp Pistachio extract
    • 3.4 oz Instant pistachio pudding mix
    • ½ cup Pistachios shelled and roughly chopped

    Topping

    • ⅓ cup Pistachios shelled and chopped to medium size

    INSTRUCTIONS 

    • Begin by measuring all of the ingredients you will need for the pistachio fudge recipe.
    • In a saucepan, fill 1/3 of the way with water and bring to a simmer. Turn down the heat to low and place a large bowl over the pot, making sure the bowl doesn’t touch the water.
    • Combine chocolate chips, condensed milk, butter, instant pistachio pudding mix, and pistachio extract in the bowl.
    • Mix the ingredients together until everything is combined.
    • The fudge mixture needs to be smooth and free of any chunks.
    • Add pistachios to the mixture.
    • Fold pistachios in with a silicone spatula.
    • Line a baking pan with parchment paper.
    • Transfer the fudge mixture into the pan.
    • Spread the mixture evenly with a clean spatula.
    • Sprinkle more pistachios on top of the fudge.
    • Gently press the nuts into the fudge. Refrigerate for a minimum of 2 hours or preferably overnight.

    Cutting fudge

    • Once the fudge has hardened, prepare a cutting board, disposable gloves, and a large knife for cutting the fudge. Have a wet kitchen towel on hand to wipe the knife after each cut.
    • Remove the fudge from the fridge and peel it off the parchment paper. Place it on the cutting board.
    • Score the fudge using a 5-wheel pastry cutter, then turn the fudge block 90 degrees and score again to create even squares.
    • The fudge should now be scored into even squares.
    • Cut the edges of the fudge with a large knife, wiping the knife with a wet kitchen towel after each cut.
    • With the edges neatly squared, the fudge block is now ready to be cut into smaller pieces.
    • Cut the fudge block along the scored lines, wiping the knife with a wet kitchen towel after each cut. Turn the fudge block 90 degrees and push the pieces back together. Finish cutting the fudge using the scored guidelines.
    • Now, you can enjoy perfect pieces of pistachio fudge!

    Storing Fudge

    To store fudge: first, wrap it securely in parchment paper or transfer it to an airtight container. Then, label the date on the outside of the wrapping and store it at room temperature for up to 2-3 weeks. 

    To freeze uncut fudge: first, grab a freezer-safe Ziploc bag and label the date on the outside. Transfer the block of fudge to the bag and release the extra air while sealing the bag closed. Store the fudge in the freezer for 2-3 months. Move the frozen fudge to the fridge to thaw for 2 days before cutting and serving.
