How to Cook Steak and Chicken on the Grill to be Perfectly Juicy and Tasty

Grilling is a constant anytime the sun is out, whether it’s burgers, hot dogs, or corn on the cob. A favorite of mine is steak and chicken on the grill. Cooking these on the grill is a very simple concept- just throw it on the grill and it’ll be ready in 20 minutes. However, to cook things perfectly is another thing. Here’s my guide to perfectly cook steak and chicken on the grill.
Steak:
Directions:
- Preheat the grill to medium-high heat.
- Bring the steak to room temperature- if coming out of the fridge, let sit for an hour.
- Wet with cold water, and dry with a paper towel.
- Season with salt and pepper.
- Place the steak on the grill, and place 2 sprigs of rosemary on the steak.
- Put a medium-sized pad of butter on the steak.
- Cook the steak for 4 to 5 minutes.
- Flip the steak, and continue to cook for 3 to 7 minutes, depending on how you want to cook the steak. 3 to 5 minutes for a medium-rare steak, and 6 to 7 minutes for a medium steak.
- Take the steak off the grill and place onto a cutting board, and cover with foil. Let sit for 10 minutes then serve.
Chicken:
Directions:
- Bring chicken to room temperature.
- Preheat the grill to medium heat.
- Wash the chicken with cold water, and dry with a paper towel.
- Season with salt and pepper.
- Spray the grill with cooking oil.
- Place the chicken on the grill and grill for 10 minutes.
- Flip the chicken and grill for another 6-8 minutes, until the chicken is 155F, 10 degrees below recommended chicken temperature (165F).
- Place the chicken on a cutting board, and cover with foil, and let sit for 10 minutes.
The trick to not overcook the meat is taking it off the grill 10 degrees below the recommended temperature before the meat is fully cooked. Since the meat will continue to cook after you take it off the heat, you don’t want to risk overcooking the meat. To check the temperature of the meat, I use a handy carving fork with a built-in thermometer. This carving fork makes it easy to check the temperature of whatever you’re cooking, instead of getting a regular thermometer.
These are very simple things to cook that can be served a million different ways. My family often eats the chicken or steak with grilled zucchini and grilled red potatoes or with grilled corn on the cob. The easiest thing about grilling your dinners is that all parts of the meal are cooked in one place, and you don’t have to worry about running around the kitchen. Even after dinner, the chicken is quite good as a leftover and can be used as a part of some chicken quesadillas or in a salad. The steak is good by itself as a leftover, but can also be made into some steak and eggs for the following morning.
