When it comes to working from home or keeping up with a super busy schedule, sometimes one of the hardest things to keep up with is eating a good lunch! I get it. As a busy mom and photography business owner I know a busy schedule all too well and have missed my fair share of lunches.
However, even when we’re running a tight ship to try to stay on track with our schedules, it’s very important to remember to take care of ourselves too. And I have personally found that one of the best self-care practices is taking a small break in the middle of the day to make a simple yet scrumptious lunch.
It’s a lot easier to put this into practice when you have easy and quick lunch recipes to help you out! One of my favorite summer lunch recipes that I can’t skip out on is this one for my Ham, Cucumber, and Sprout Sandwich! This scrumptious sandwich is loaded with healthy vegetables, cheese, ham, and hummus for the most perfect of mid-day energizers!

To make a ham, cucumber, and sprout sandwich, all you need is: sourdough bread, hummus, swiss cheese, thinly-sliced ham, cucumber slices, fresh sprouts, a knife, and a cutting board. First, take 2 slices of sourdough and cut them in half on a cutting board. Then, spread hummus on top of all 4 slices of bread. Then, on 2 of the slices: layer on the ham, followed by the cucumbers, and top it all off with some fresh sprouts. Close the sandwiches, serve, and enjoy!

- 2 slices sourdough bread
- 4 tbsp hummus
- 2 slices Swiss cheese
- 6 slices Ham– Thin Sliced
- 6 slices Cucumbers
- 1 cup Fresh sprouts

How to Make a Ham, Cucumber, and Sprout Sandwich
I know you’ve probably got a busy day ahead of you so let’s get you fueled up and ready to go! This is a simple sandwich process so you can have lunch ready in about 5 minutes. Here’s how to make my scrumptious ham, cucumber, and sprout summer sandwich:
- First, use the measuring cup and spoons to measure out and prepare your ingredients.
- Next, bring out the cutting board and a kitchen knife.
- Set the 2 slices of sourdough bread on the cutting board stacked on top of each other.
- Then, cut both slices in half. Lay the 4 bread pieces out to make 2 sandwiches.
- Next, spread some hummus on top of each piece of bread.
- Follow that up with 1 slice of swiss cheese for each sandwich.
- Then, layer on a few slices of the thin ham on top of the cheese.
- Add a few slices of cucumber on top of the ham.
- Next, pile on about ½ cup of fresh sprouts on each sandwich.
- Close each sandwich with its other half.
- Finally, serve, enjoy, and devour your ham, cucumber, and sprout sandwich!
Storage Tip:
Due to all the fresh veggies and hummus on this spectacular sandwich, it’s best to enjoy it all right away instead of trying to save some for later.
