How to make an easy comfort food breakfast with easy blueberry empanadas!

It’s those comforting blueberry recipes that inspired me to try another scrumptious snack: Easy Empanadas with Blueberries! I’m so glad I did try them because this blueberry treats turned out absolutely amazing!
The sweet tartness of the blueberry filling mixed with a perfect pastry crunch on the outside made these empanadas swoon-worthy! Plus, they’re incredibly easy to make, and my recipe only requires a handful of ingredients and cooking tools.
These blueberry empanadas are perfect for quick and easy breakfasts, breakfast meal prep, scrumptious snacks, and delectable desserts! I like to make a big batch and freeze them, then heat them up quickly in the mornings for a super quick and comforting breakfast solution.
Whatever you want to make these blueberry empanadas for, they’re sure to make it to the top of your comfort food favorites list with the first bite! Here’s how to make my Easy Empanadas with Blueberries.
Empanada Tools
First, we need to go over the tools and equipment for this recipe. There’s not a lot to expect here, but to make empanadas you will need a press mold to seal them properly. Everything else you probably already have in your kitchen. Here’s what I use to make blueberry empanadas:
- Measuring spoons
- Empanada press mold
- Silicone pastry brush
- Baking sheet
- Parchment paper sheets
- Fruit knife
Blueberry Empanada Ingredients
Now let’s go over my super short and sweet empanada ingredient list. This easy comfort food recipe only requires 3 simple ingredients! Here are my easy blueberry empanada ingredients:
- 1 package Empanada dough– defrosted
- ½ can Blueberry Pie Filling
- 1 Egg– for egg wash
How to Make Easy Blueberry Empanadas
Now it’s time to make some sweet and tasty treats! This process is very straightforward and easy to follow along with, as long as you have the right tools. Here’s how to make my easy blueberry empanadas:
- First, measure out the blueberry empanada ingredients with the measuring spoons and preheat the oven to 375°F.
- Next, in a small bowl, crack the egg.
- Whisk it well to create an egg wash.
- Then, line a baking sheet or two with parchment paper. Grab the blueberry filling, empanada dough, egg wash, and the empanada press mold.
- Lightly stretch one of the empanada dough discs by hand.
- Lay the stretched dough disc over the open press mold and brush the egg wash around the edge of the dough disc.
- Next, scoop 1.5 tbsp of the blueberry filling into the middle of the dough.
- Then, before pressing the empanada, make sure that there is no filling on the edges of the dough.
- If needed, gently press the blueberry filling towards the middle to remove it from the edges.
- Squeeze the empanada press closed.
- Open the press to reveal the pressed blueberry empanada.
- Then, using a small fruit knife, carefully cut little vents in the empanada dough.
- I cut 3 small vents in each of my empanadas.
- Repeat the filling, pressing, and venting process for the rest of the empanadas.
- Then, transfer the pressed empanadas to the parchment-lined baking sheet and lightly brush the top of the empanadas with the egg wash.
- Bake the blueberry empanadas for 25 minutes.
- Finally- serve, devour, and enjoy!
Storing Blueberry Empanadas
To store blueberry empanadas: place the empanadas in an airtight container. Store in the fridge for up to 3-4 days. Or transfer the empanadas to a freezer-safe bag and store them in the freezer for up to 3 months. Thaw them in the fridge overnight before reheating. Always label the date on the outside of the container to keep up with freshness.
To reheat empanadas:
- Bake them in a toaster oven for 12 minutes at 350°F.
- Heat them in an air fryer for 5 minutes at 375°F.
- You can also use the microwave method too by heating them up for 1.5 minutes. However, the empanadas tend to come out a little bit soggy with this method.

Easy Empanadas with Blueberries

- 1 package Empanada dough defrosted

- 1 Egg for egg wash
Instructions
- First, measure out the blueberry empanada ingredients with the measuring spoons and preheat the oven to 375°F.
- Next, in a small bowl, crack the egg.
- Whisk it well to create an egg wash.
- Then, line a baking sheet or two with parchment paper. Grab the blueberry filling, empanada dough, egg wash, and the empanada press mold.
- Lightly stretch one of the empanada dough discs by hand.
- Lay the stretched dough disc over the open press mold and brush the egg wash around the edge of the dough disc.
- Next, scoop 1.5 tbsp of the blueberry filling into the middle of the dough.
- Then, before pressing the empanada, make sure that there is no filling on the edges of the dough.
- If needed, gently press the blueberry filling towards the middle to remove it from the edges.
- Squeeze the empanada press closed.
- Open the press to reveal the pressed blueberry empanada.
- Then, using a small fruit knife, carefully cut little vents in the empanada dough.
- I cut 3 small vents in each of my empanadas.
- Repeat the filling, pressing, and venting process for the rest of the empanadas.
- Then, transfer the pressed empanadas to the parchment-lined baking sheet and lightly brush the top of the empanadas with the egg wash.
