By the time you finish helping get your kids up, fed, ready for school, and then rushed out the door, you’re already ready for the first break of the day. And you’re probably starting to feel the daily drag beginning to set in too.

In moments like this, a lot of us parents usually do a zombie shuffle over to the coffee maker in hopes that a magical cup of coffee will give us the energy needed to take on the day. While I do love my morning coffee like most people, I like to actually start my day with an energizing breakfast.

Now I know you’re sitting over there thinking that you don’t have the time to make yourself a nutritious breakfast in the mornings, but there are ways to work around that! I have several breakfast meal prep recipes that can be reheated in just a few minutes for breakfast on-the-go.

But I also happen to have several super quick and easy fresh breakfast recipes you can try as well! One of my favorite quick breakfasts is this one for my Breakfast Egg and Sprouts Sandwich!

This quick and easy breakfast sandwich is made with just a handful of fresh and delectable ingredients and can be made in less than 10 minutes! They say breakfast is the most important meal of the day so this is an excellent way to keep from skipping out on it.

One of my secrets to being able to make this scrumptious breakfast sandwich whenever I want to, is that I like to grow my own fresh sprouts! It’s super easy to do and can be done right on the kitchen counter. Here’s my simple guide on How to Grow Sprouts in a Jar.

Starting the day with an energizing and nutritious breakfast is a sure way to lead to a more productive day without as much of the typical morning “grog” that a lot of us battle with. To help you start your days a better way, here’s how to make my scrumptious Breakfast Egg and Sprouts Sandwich!

To make a breakfast egg and sprouts sandwich, all you need is: a skillet, olive oil, egg, swiss cheese, fresh sprouts, and toasted brioche bread. First, set out all the ingredients. Then, heat up the oil in the nonstick skillet. Crack and fry the egg to your desired doneness. Next, begin layering the sandwich starting with 1 slice of toasted brioche bread. Top it with a slice of swiss cheese, followed by the fried egg, and finish it off with a handful of fresh sprouts. Top it with the other slice of bread, cut in half, and enjoy!

    • 1 tbsp Olive Oil
    • 1 Egg
    • 1 slice Cheese Swiss Slices
