    Whether you’re ready to welcome the autumn season with tasty fall flavors, or you want an autumn-themed project to do with the whole family, baking up a batch of tasty treats is the best way to accomplish both! Especially with easy recipes like this one for yummy Apple Oatmeal Cookies! These delightful cookies come with a super simple process and they combine the most traditional of fall flavors: cinnamon, apple, and oatmeal. But fair warning, just one bite out of one of these little goodies will have you fighting the temptation to devour the whole batch by yourself!

    However, these autumn apple cookies aren’t just perfect for satisfying that insatiable sweet tooth, they are also excellent treats to pack in with the kid’s lunches! Now, they too can enjoy the sweet celebration of fall throughout the whole season, but with a treat, that’s much better for them than extra candy or chocolate would be. You can even pack these cookies up and take them to loved ones as easy fall gift ideas if you want to spread some of that autumn bliss around.     First, let’s go over the tools and equipment we will need for this autumn cookie recipe. You actually won’t need a ton of tools here, just some common baking equipment along with one extra tool needed for preparing the apples.

    • Hand mixer
    • Glass mixing bowl
    • Spatulas
    • Swivel Peeler
    • Dough scoop
    • Cooling rack
    • Baking sheet
    • Parchment paper sheets

    Fresh and Crisp Cookie Ingredients

    Next, let’s talk about these sweet, yet simple, apple oatmeal cookie ingredients. For fancy fall cookies, you surprisingly won’t need a lot here either! Just a few typical cookie ingredients with a few tasty additions to really encompass the cinnamon, apple, and oatmeal flavors! 

    Simple Apple Oatmeal Cookie Ingredients:

    • 1 ¼ cups all-purpose flour
    • 1 ¼ cups old-fashioned rolled oats
    • 1 tsp ground cinnamon
    • ½ tsp baking soda
    • ¼ tsp salt
    • ½ cup unsalted butter – room temperature
    • ¾ cup brown sugar
    • 1 egg
    • 1 tsp vanilla extract
    • 1 cup green apples – peeled and chopped into small cubes

    How to Make Apple Oatmeal Cookies for Autumn

    Roll up those baker sleeves because it’s time to make some autumn magic happen in the kitchen! This simple cookie process is very easy to do so you can easily turn this into a fun fall project to do with the kiddos to help warm them up from that crisp autumn air. 

    1. First, prepare and measure out all of the cookie ingredients and preheat the oven to 350°F.
    2. Next, pour the flour, oats, cinnamon, baking soda, and salt into a large mixing bowl.
    3. Mix the dry ingredients with a silicone spatula until completely combined.
    4. Then, drop the butter and brown sugar into a separate large mixing bowl.
    5. Use the hand mixer, on medium speed, to beat the butter and sugar together until completely mixed.
    6. Then, add the egg and vanilla extract into the bowl with the butter and sugar mixture and beat until mixed well.
    7. Next, pour half of the flour mixture into the wet ingredient mixture and mix well.
    8. Add the remaining flour mixture to the cookie dough and finish mixing well with the hand mixer.
    9. Once the batter is completely combined, fold the small apple cubes into the cookie batter with a silicone spatula. 
    10. Then, line a baking sheet or two with a sheet of parchment paper and grab a small dough scoop.
    11. Spread single scoops of the cookie dough over the prepared baking sheets so the cookies have room to evenly bake.  
    12. Bake the apple oatmeal cookies for 14-15 minutes. Let the cookies cool slightly on the pan, then transfer to a wire rack to finish cooling completely.

    Storing Apple Oatmeal Cookies

    To store apple oatmeal cookies: transfer the cookies to an airtight container and store them in the fridge for up to 5 days. Since these cookies are made with fresh fruit it’s best to keep them refrigerated, not stored at room temperature. Label the date on the outside of the container to keep up with freshness.
