    As a baking enthusiast, I’m always on the lookout for new and exciting ways to elevate my homemade treats. So when I stumbled upon the idea of making chocolate icing for cookies, I knew I had to give it a try. And let me tell you, it did not disappoint.

    The first time I tasted chocolate icing on sugar cookies was at Starbucks during the holidays years ago. I remember taking a bite of the cookie and being pleasantly surprised to taste rich, chocolatey goodness instead of the expected royal icing. From that moment on, I was hooked on this delicious alternative to traditional cookie decoration.

    I soon realized that chocolate icing was not only a tasty addition to cookies, but also incredibly easy to make with just a few ingredients. This fast-drying icing was perfect for when I needed to quickly decorate cookies without the hassle of waiting for them to dry like with royal icing.

    One of my favorite occasions to use chocolate icing is for kids’ birthday parties. For my daughter’s ninth birthday, I made a batch of adorable Panda cookies decorated with chocolate icing. I even individually packaged them in clear bags for party favors, and they were an instant hit with both kids and adults alike.

    INGREDIENTS  

    • 1 ½ cups Semi-Sweet Chocolate Chips
    • 2 tbsp coconut oil

    INSTRUCTIONS 

    • Add chocolate chips and coconut oil into the candy melting pot.
    • Turn the pot on high heat and mix regularly until all chocolate chips are melted and the melted chocolate reaches a smooth consistency.
    • If the chocolate is too thick, add more coconut oil, 1/2 tsp at a time.
    • Prepare a royal icing piping bag over a tall glass.
    • Split the melted chocolate into 2 piping bags.Cut 1 mm from the end of Bag 1, which will be used for edging.Cut 2-3 mm from the end of Bag 2, which will be used for filling.

    Storage and Reheating:

    To ensure that your chocolate icing stays fresh and ready to use, it’s important to store it properly. To store your chocolate icing, simply place it in an airtight container and keep it at room temperature for up to a week. If you need to store it for longer, you can keep it in the refrigerator for up to two weeks, or in the freezer for up to three months. To freeze, put the chocolate icing in a labeled Ziploc bag and write the date with a sharpie. When you’re ready to use it again, you can reheat the icing using the same method as when you first made it.
