How to make perfect homemade eggnog scones for the holidays!

    What’s not to love about the cheerful holiday season? There are twinkling lights everywhere, families and friends come together, and of course, there are endless sweet treats to chow down on throughout the entire season! As for me, I just can’t get enough of those tasty sweets and coming up with new ways to incorporate traditional Christmas flavors into my homemade recipes.

    One of my favorite holiday flavors to work with is eggnog! The thick, seasoned beverage is perfect for mixing in with pastry recipes for added moisture and Christmas flavor. One of my favorite eggnog recipes is this one for scrumptious Eggnog Scones!

    These Christmas scones are baked to perfection then topped with some perfectly-paired white chocolate drizzle. Talk about a baked treat that tastes like Christmas feels! These scrumptious scones are perfect for anything from holiday parties, family gatherings, sending to loved ones for Christmas gifts, or even just for a family Christmas movie night!

    Easy Scone Equipment

    First, let me go over my scone-making equipment. There’s nothing special or fancy to expect here, just a few common baking tools and utensils that are typically used for making cookies. Here’s what I use to make a Christmas batch of eggnog scones:

    • Measuring Cup
    • Measuring spoons
    • Blending whisk
    • Dough scoop
    • 3 Baking sheet
    • 3 Parchment paper sheets
    • Hand mixer
    • Wilton candy melts pot
    • Saucier Drizzle Spoon

    Scrumptious Scone Ingredients

    Once you’ve rounded up the equipment it’s time for the scrumptious scone ingredients! My ingredient list for these scones is pretty short and simple. If you already like to bake with seasonal seasonings (see what I did there?) then you probably already have most of what you need. These are the ingredients I use for eggnog scones:

    Eggnog Scones:

    • 2 ¾ cups Cake Flour or all-purpose flour
    • 1 tsp baking soda
    • ¼ tsp salt
    • ½ tsp Ground Nutmeg
    • ½ tsp Ground Cinnamon
    • 2 eggs
    • 2 tsp vanilla extract
    • ½ cup eggnog
      • If want more eggnog flavor, add 1 tsp of eggnog extract
    • ¾ cup unsalted butter – room temperature
    • 1 cup brown sugar – packed

    White Chocolate Drizzle:

    • 1 cup Bright white Wilton Candy Melts
    • 1 tbsp coconut oil

    How to Make Eggnog Scones

    Now it’s time for a little Christmas magic! My scone process is incredibly simple and easy to follow along with so even beginner bakers should have no trouble whipping up a batch of these scrumptious scones. Here is how I make cheerful Christmas eggnog scones:

    Making Eggnog Scones:

    1. First, use the measuring cup and spoons to measure out all of the scone ingredients.
    2. Next, in a medium-size mixing bowl, use a blending whisk to mix the cake flour, baking soda, nutmeg, cinnamon, and salt.
    3. Then, in a separate mixing bowl, combine the eggs, vanilla extract, and eggnog.
    4. In another large bowl, drop in the butter and brown sugar.
    5. Beat the butter and brown sugar together with a hand mixer until smooth.
    6. Next, add the egg mixture into the butter mixture.
    7. Mix again until everything is completely combined.
    8. Then, ⅓ at a time, add the dry ingredients into the wet, mixing well between each addition.
    9. Keep mixing until the batter is completely combined. Then, line 1 baking sheet with a sheet of parchment paper.
    10. Next, use a dough scoop to scoop rounded scone dough balls onto the lined baking sheet. Don’t worry about spacing them out perfectly yet.
    11. Refrigerate the dough balls for 30 minutes. Preheat the oven to 350°F.
    12. Next, line 2 separate baking sheets with parchment paper. Transfer the chilled dough scoops onto the new baking sheets, spacing the dough balls 2 inches apart. Bake the scones for 11-12 minutes.
    13. Finally, let the scones cool completely before drizzling with the chocolate.

    Making the White Chocolate Drizzle:

    1. First, gather the white chocolate ingredients.
    2. Then, melt the White Candy Melts and the coconut oil together in the candy melting pot while stirring with a silicone spatula.
      1. Keep reading for an alternate chocolate-melting method.
    3. Once completely melted, grab a saucier drizzle spoon for the next step.
    4. Using the saucier spoon, drizzle each eggnog scone with white chocolate.
    5. Let the drizzle on the cookies set, then serve and enjoy!

    Alternative Chocolate-Melting Method

    If you don’t have a nifty candy melting pot in your kitchen collection, here is a simple microwave melting method that will work for anyone!

    How to Melt Candy Melts in the Microwave:

    1. First, pour the candy melts into a heat-safe bowl or silicone measuring cup. 
    2. Then, heat the candy melts in the microwave at 50% power, or on a defrost setting, for 1 minute. 
    3. Next, stir the candies thoroughly. 
      1. Use a towel or an oven mitt to protect your hand from the heat when handling the bowl or cup.
    4. Then, continue to microwave the candies at the same low setting in 15-30 second intervals, stirring in between each interval, until the candy is almost melted.
    5. Finally, let the candy sit for about 1 minute to let the residual heat take care of any small unmelted pieces of candy leftover.
      1. If you try another interval of cooking at this point, the candy could overcook and burn so it’s better to let the candy sit and take care of itself.

    Storing Eggnog Scones

    The best way to store homemade scones is to transfer them to an airtight container lined with paper towels. Stack the scones in between wax paper layers, if necessary. Keep the scones stored at room temperature for 1-2 days. To freeze baked scones: wrap the scones in plastic wrap, then again with kitchen foil and transfer the wrapped scones to a freezer-safe Ziploc bag and freeze for up to 3 months. Thaw before serving. Always label the date on the outside of the container.
