    As the cool, crisp autumn days move in closer towards us, so does the sweet tooth craving for all things pumpkin spice. Luckily, you don’t have to wait until Thanksgiving to get that sweet pumpkin fix though. There are a few simple pumpkin recipes that you can make in no time to satisfy that sweet tooth and hold over that craving until you can devour a slice of this year’s pumpkin pie. Want an example? This easy and quick Pumpkin Pie Mug Cake is the perfect recipe to warm you up while curbing that pumpkin spice craving.

    To make an easy pumpkin pie mug cake all you need is flour, baking powder, salt, sugar, pumpkin pie spice, pumpkin puree, milk, vanilla extract, and a microwave safe mug.  Just whisk the ingredients together in a mixing bowl, then pour the batter into a lightly oiled mug. Microwave the cake for 2 minutes, then add whipped cream topping and enjoy!

    Mug Cake Ingredients:

    • 4 tbsp all-purpose flour
    • pinch salt
    • 2 tsp Baking Powder
    • 2 tbsp sugar
    • 1 tsp Pumpkin pie spice
    • ½ tsp vanilla extract
    • 3 tbsp Milk
    • 2 tbsp Pumpkin Puree
    • Cooking spray oil

    Spice Tip: If you don’t have pumpkin pie spice on hand then you can make your own using a mixture of cinnamon, nutmeg, clove and ginger.

    • Homemade Whipped Cream– can substitute for store- bought but it is nowhere near as good as the homemade version.

    1. First, gather up all the kitchen tools and measure out all the pumpkin pie cake ingredients.
    2. Then, pour the flour, salt, baking powder, sugar, and pumpkin pie spice into a glass mixing bowl and mix everything together with a blending whisk.
    3. Next, add in the vanilla, milk, and pumpkin puree to the dry ingredient mixture.
