Instructions
Fudge
Begin by measuring all of the ingredients you will need for the chocolate pistachio fudge recipe.
In a saucepan, fill 1/3 of the way with water and bring it to a simmer. Then, turn down the heat to low.
Place a large bowl over the pot, making sure the bowl doesn't touch the water.
Combine chocolate chips, condensed milk, butter, and vanilla extract in the bowl.
Mix continuously with a silicone spatula.
The mixture is ready when the chocolate chips are melted and the mixture reaches a smooth consistency.
Add pistachio nuts into the fudge mixture.
Gently fold the pistachios into the fudge mixture using a silicone spatula.
Line a cheesecake pan with parchment paper.
Transfer the fudge mixture into the cheesecake pan.
Use the silicone spatula to spread and smooth the fudge mixture evenly in the pan.
Sprinkle crushed pistachios on top of the fudge.
Gently press the nuts into the fudge with a clean silicone spatula.
Refrigerate the fudge for 2 hours or preferably overnight to allow it to set.
Cutting fudge
Once the fudge has hardened, prepare a cutting board, disposable gloves, and a large knife for cutting.
Remove the fudge from the fridge.
Peel it off the parchment paper. Place it on the cutting board.
Score the fudge using a 5-wheel pastry cutter.
Turn the fudge block 90 degrees and score again to ensure even squares.
Cut the fudge block along the scored lines, wiping the knife with a wet kitchen towel after each cut.
Push the cut pieces together to maintain their shape.
Turn the fudge block 90 degrees and finish cutting the fudge using the scored guidelines.
Now, you should have perfectly squared pieces of fudge ready to enjoy!
