First, measure out all of the pasta ingredients with the measuring cup and spoons.
Next, cook the pasta per the package instructions.
While the pasta is cooking, combine the shrimp, 2 tbsp olive oil, garlic, pepper, and Italian seasoning in a medium bowl.Let this mixture sit while pasta is cooking, or you can do this the night before and let it marinate overnight in the fridge.
Next, begin preheating a large nonstick skillet over medium-high heat.
Add the butter and vegetable stock to the skillet and let the butter melt completely.
Then, place the marinated shrimp in the skillet in a single layer and cook for 1 minute.
Flip and cook the shrimp for an additional 1 minute, then remove them from the heat.
Using the same skillet, heat up 2 tbsp olive oil and add the spinach.
Cook until the spinach is wilted, about 30 seconds.
Next, divide the cooked pasta into serving bowls.
Top the pasta with the cooked spinach.
Then, pile on the garlic shrimp!For vegetarians you can simply skip this shrimpy step.
Garnish the shrimp pasta bowls generously with shaved parmesan.
Finally, serve and devour!

Pasta Serving and Storage Tip:This shrimp pasta dish is best served while hot and fresh! Due to the spinach and shrimp, it does not keep very well in the fridge as leftovers so I recommend serving all of the pasta right after cooking.
