First, prepare a baking sheet with a layer of parchment paper, and set out all of the garnishing ingredients.
Next, take a watermelon slice and cut it into several 1-inch thick strips. Then, cut each of those watermelon strips into several 1-inch cubes. Repeat for all of the watermelon slices. Go ahead and stick each cube with a wooden appetizer fork.
Then, combine the chocolate chips and coconut oil in the candy melt pot. Heat them together while stirring with a silicone spatula until completely melted together.
When the chocolate is melted, dip each prepared watermelon cube halfway into the melted chocolate.
After dipping each watermelon cube, immediately garnish it with any of your favorite garnishes. Then, transfer the garnished cubes to the prepared baking sheet.
Finally, place the whole baking sheet of dipped watermelon bites in the fridge and let them sit for 10 minutes. Serve and enjoy!
