First, measure out all of the rice ingredients with the measuring cup and spoons.
Then, use the rice washer to rinse and strain the rice.
Next, preheat a large cooking pot.
Pour in the vegetable oil and let it heat up.
Then, pour in the rinsed rice.
Cook the rice on medium-high, while stirring regularly.
Cook until the rice is golden brown.
Next, add the garlic and cook for another 3 minutes while stirring.
Cook for another 2 minutes and stir again.
Next, pour in the chicken stock.
Then, add in the salt, pepper, and tomato paste. Stir and bring to a boil.
Combine all the ingredients together with a blending whisk.
Next, cover and simmer for 30-40 minutes, or until no liquid is left.
Check to make sure the rice is fully cooked.
Then, add in the chopped cilantro.
Mix the cilantro evenly and gently with a spatula.
Finally, serve this easy Mexican rice and enjoy!
