Instructions
First, prepare and measure out all of the cookie ingredients and preheat the oven to 350°F.
Next, pour the flour, oats, cinnamon, baking soda, and salt into a large mixing bowl.
Mix the dry ingredients with a silicone spatula until completely combined.
Then, drop the butter and brown sugar into a separate large mixing bowl.
Use the hand mixer, on medium speed, to beat the butter and sugar together until completely mixed.
Then, add the egg and vanilla extract into the bowl with the butter and sugar mixture and beat until mixed well.
Next, pour half of the flour mixture into the wet ingredient mixture and mix well.
Add the remaining flour mixture to the cookie dough and finish mixing well with the hand mixer.
Once the batter is completely combined, fold the small apple cubes into the cookie batter with a silicone spatula.
Then, line a baking sheet or two with a sheet of parchment paper and grab a small dough scoop.
Spread single scoops of the cookie dough over the prepared baking sheets so the cookies have room to evenly bake.
Bake the apple oatmeal cookies for 14-15 minutes. Let the cookies cool slightly on the pan, then transfer to a wire rack to finish cooling completely.

To store apple oatmeal cookies: transfer the cookies to an airtight container and store them in the fridge for up to 5 days. Since these cookies are made with fresh fruit it’s best to keep them refrigerated, not stored at room temperature. Label the date on the outside of the container to keep up with freshness.
