This is not fancy chocolate, but personally think this is one of the best for melting. I've used this chocolate to make bark during the holidays and have had the best success with Wilton brands. I like to layer my bark with both white and dark chocolate and when trying other competitors' melts, I have found that the layers don't always stay together and will separate, especially when breaking the bark into bite sizes. Wilton brand melts have given me no trouble when layering, and everyone always goes back for seconds!
However I noticed that it took a long time to melt, much longer than just chocolate, and it started to solidify very quickly. On the one hand this means it won't take long to make molded candies you can share but on the other hand you have to work fast once you start.
My first project with this bag as to make Darth Vader chocolates... welcome to the dark side!
